Ingredients

Scale
  • 4 large eggs
  • 3 tablespoons neutral oil
  • 2 tablespoons chili oil
  • 1/4 teaspoon salt
  • 1 teaspoon sesame seeds
  • 1 tablespoon green onions, finely chopped

Instructions

  1. Heat a nonstick or cast iron skillet over medium high heat.
  2. Add neutral oil and heat until shimmering but not smoking.
  3. Crack the eggs into small bowls individually, then carefully slide them into the hot oil.
  4. Fry for 2 to 3 minutes until the whites are crispy and golden at the edges while the yolks remain soft.
  5. Spoon a little hot oil over the whites if needed to help them cook evenly.
  6. Sprinkle salt over the eggs.
  7. Drizzle chili oil evenly on top.
  8. Finish with sesame seeds and chopped green onions, then serve immediately.

Notes

  • Use enough oil to allow the edges to crisp properly.
  • Add chili oil after cooking to preserve its flavor.
  • Do not overcrowd the pan for best texture.
  • Serve immediately for optimal crispiness.
