A creamy, fresh avocado pasta inspired by a modern celebrity style dish, made with ripe avocados, garlic, lemon, and basil for a silky sauce that coats every strand of pasta perfectly.

Ingredients

  • 300g spaghetti or linguine
  • 2 ripe avocados, peeled and pitted
  • 2 garlic cloves
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1/2 cup fresh basil leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente according to package instructions.
  2. In a blender, add avocados, garlic, lemon juice, olive oil, basil, salt, and black pepper.
  3. Blend until completely smooth and creamy.
  4. Reserve 1/3 cup pasta water, then drain the pasta.
  5. Return pasta to the pot and pour avocado sauce over it.
  6. Toss well, adding reserved pasta water little by little until the sauce coats the pasta evenly.
  7. Taste and adjust seasoning if needed.
  8. Serve immediately while creamy and fresh.

  • Use ripe avocados for the creamiest texture.
  • Serve immediately to prevent the sauce from oxidizing.
  • Add pasta water slowly to control sauce thickness.
  • Fresh basil enhances flavor and aroma significantly.
