Ingredients

Scale
  • 1 cup yellow cornmeal
  • 1/2 cup all purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 2 cups milk
  • 2 tablespoons unsalted butter
  • 3 cups vegetable oil, for frying

Instructions

  1. Lightly grease an 8×8 inch baking dish and set aside.
  2. In a medium saucepan, whisk together cornmeal, flour, sugar, salt, and garlic powder.
  3. Stir in milk and unsalted butter. Cook over medium heat, stirring constantly, for 5 to 7 minutes until the mixture thickens significantly.
  4. Pour the thick mixture into the prepared baking dish and spread evenly.
  5. Refrigerate for at least 1 hour, or until completely firm.
  6. Turn the chilled slab onto a cutting board and slice into long fry shaped strips.
  7. Heat vegetable oil in a deep skillet to 350 degrees F.
  8. Fry corn fries in batches for 3 to 4 minutes until golden brown and crispy.
  9. Remove with a slotted spoon and drain on paper towels. Sprinkle lightly with salt and serve warm.

Notes

  • Do not skip chilling time, it ensures clean slicing and proper structure.
  • Maintain oil temperature around 350 degrees F for best crispiness.
  • Reheat leftovers in the oven or air fryer to restore crunch.
