Fluffy sweet potato waffles with crisp golden edges and a soft, tender center. Naturally sweetened with mashed sweet potato and lightly spiced with cinnamon, these waffles are perfect for cozy breakfasts or weekend brunch.

Ingredients

Scale
  • 1 cup mashed sweet potato, cooked and cooled
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon maple syrup, plus extra for serving

Instructions

  1. Preheat the waffle maker according to manufacturer instructions.
  2. In a large bowl, whisk together mashed sweet potato, eggs, milk, melted butter, and maple syrup until smooth.
  3. In a separate bowl, combine flour, baking powder, ground cinnamon, and salt.
  4. Gradually add the dry ingredients into the wet mixture and stir until just combined. Do not overmix.
  5. Lightly grease the waffle maker plates.
  6. Pour batter into the center of the waffle maker and close the lid.
  7. Cook for 4 to 5 minutes, or until golden brown and crisp.
  8. Carefully remove waffles and place on a wire rack to maintain crispness.
  9. Serve warm with additional maple syrup if desired.

Notes

  • Roast sweet potatoes for deeper flavor instead of boiling.
  • Avoid overmixing the batter to keep waffles fluffy.
  • Place cooked waffles on a wire rack instead of stacking to prevent sogginess.
  • Freeze leftovers in a single layer and reheat in a toaster.
