  • 2 pounds sweet potatoes, peeled and thinly sliced
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup grated cheddar cheese
  • 1 cup heavy cream
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F and lightly grease a medium baking dish with olive oil.
  2. In a mixing bowl, stir together heavy cream, minced garlic, salt, black pepper, and dried thyme.
  3. Arrange a layer of sliced sweet potatoes in the baking dish, slightly overlapping.
  4. Sprinkle a portion of mozzarella and cheddar over the layer, then drizzle a few spoonfuls of the cream mixture on top.
  5. Repeat layering sweet potatoes, cheeses, and cream mixture until all ingredients are used, finishing with cheese on top.
  6. Cover the dish with foil and bake for 35 minutes.
  7. Remove the foil and bake for an additional 20 to 25 minutes until the top is golden and the sweet potatoes are fork tender.
