  • 1 French baguette, sliced into 1/2 inch rounds
  • 2 tablespoons olive oil
  • 8 ounces goat cheese, softened
  • 1 tablespoon honey
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup fresh blueberries
  • 1 ripe peach, thinly sliced
  • 1 tablespoon fresh mint leaves, finely sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a small bowl, mix softened goat cheese with honey, salt, and black pepper until smooth and spreadable.
  3. Arrange baguette slices on the baking sheet and brush both sides lightly with olive oil.
  4. Toast for 8 to 10 minutes, flipping halfway through, until golden and crisp.
  5. Spread a generous layer of the goat cheese mixture onto each toasted slice.
  6. Top with sliced strawberries, blueberries, and peach slices, arranging evenly.
  7. If desired, return to the oven for 2 to 3 minutes for slightly warmed toppings.
  8. Finish with freshly sliced mint and serve immediately.
