Fresh and juicy cherry tomatoes hollowed and filled with a smooth cream cheese and herb mixture. These bite sized appetizers are creamy, tangy, and perfect for parties, gatherings, or light snacks.

Ingredients

  • 24 large cherry tomatoes
  • 8 ounces cream cheese, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons green onions, finely chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon olive oil

Instructions

  1. Slice the tops off the cherry tomatoes and carefully scoop out the seeds and pulp using a small spoon. Pat the insides dry with paper towel.
  2. In a mixing bowl, combine softened cream cheese, parsley, green onions, garlic powder, salt, black pepper, and olive oil. Mix until smooth and well blended.
  3. Spoon or pipe the cream cheese mixture into each hollowed tomato until slightly mounded on top.
  4. Arrange the filled tomatoes on a platter.
  5. Refrigerate for at least 30 minutes to allow the filling to firm up.
  6. Garnish with a small sprinkle of chopped parsley before serving.

Notes

  • Use firm cherry tomatoes so they hold their shape.
  • Dry the inside of the tomatoes well to prevent watery filling.
  • Extra filling can be used as a spread for crackers or toast.
