A cozy, creamy small batch Chicken Divan made just for two, featuring tender shredded chicken and bright broccoli baked in a rich mushroom sauce and topped with golden melted cheddar. Perfect for an intimate comfort food dinner.

  • 2 cups cooked chicken breast, shredded
  • 2 cups broccoli florets, lightly steamed
  • 1 cup cream of mushroom soup
  • 1/4 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375 F.
  2. In a mixing bowl, stir together the cream of mushroom soup, sour cream, lemon juice, garlic powder, salt, black pepper, and 1/2 cup of the shredded cheddar cheese.
  3. Lightly grease a small baking dish.
  4. Spread the shredded chicken evenly in the dish, layer the steamed broccoli on top, then pour the creamy mixture over everything and spread gently to cover.
  5. Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top.
  6. Bake for 20 to 25 minutes until the casserole is bubbly and the cheese is lightly golden.
  7. Let rest for 5 minutes before serving to allow the sauce to set slightly.
