A creamy slow cooker chicken and broccoli dish made with a rich sauce and melted cheddar, perfect for an easy comforting dinner.

  • 2 pounds boneless skinless chicken, cut into bite sized pieces
  • 4 cups fresh broccoli florets
  • 2 cans (10.5 ounces each) cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon olive oil

Instructions

  1. Lightly coat the inside of the slow cooker with olive oil.
  2. In a bowl, mix cream of chicken soup, sour cream, garlic powder, onion powder, salt, and black pepper.
  3. Place chicken pieces in the slow cooker.
  4. Pour creamy mixture over chicken and coat evenly.
  5. Cover and cook on low for 4 to 5 hours until chicken is tender.
  6. Add broccoli during the last hour of cooking.
  7. Mix cornstarch and water, then stir into slow cooker to thicken sauce.
  8. Stir in 1 cup cheddar cheese until melted. Sprinkle remaining 1/2 cup on top and allow to melt before serving.

Notes

  • Add broccoli later to prevent overcooking.
  • Stir gently to keep chicken intact.
  • Adjust seasoning before serving.
