Roasted Garlic Pasta is a comforting and flavorful dish featuring caramelized roasted garlic blended into olive oil and tossed with tender pasta, parmesan, and fresh parsley. It is simple, elegant, and packed with mellow, sweet garlic flavor.

Ingredients

  • 12 ounces spaghetti or linguine
  • 2 whole garlic bulbs, tops sliced to expose cloves
  • 1/2 cup olive oil, divided
  • 1/2 cup freshly grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt, plus more for pasta water
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the tops off the garlic bulbs, drizzle with 2 tablespoons of olive oil, and wrap loosely in foil.
  3. Roast the garlic for 35 to 40 minutes until soft and golden. Remove from oven and let cool slightly.
  4. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente.
  5. Drain the pasta, reserving 1/2 cup of pasta water.
  6. Squeeze the roasted garlic cloves into a large bowl and mash gently. Stir in the remaining olive oil.
  7. Add the hot pasta to the bowl and toss well, adding reserved pasta water gradually to create a silky coating.
  8. Stir in parmesan, parsley, salt, black pepper, and red pepper flakes if using.
  9. Serve immediately with extra parmesan if desired.

Notes

  • Roast garlic until completely soft to avoid bitterness.
  • Add reserved pasta water slowly to control sauce consistency.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently with a splash of water or olive oil to refresh texture.
