A comforting baked casserole made with tender chicken, steamed broccoli, creamy mushroom sauce, melty cheddar cheese, and a buttery crushed cracker topping baked until golden and crisp.

  • 3 cups cooked chicken, diced
  • 4 cups fresh broccoli florets, lightly steamed
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups Ritz crackers, crushed
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 375 degrees F and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine cream of mushroom soup, sour cream, milk, garlic powder, salt, black pepper, and 1/2 cup of the shredded cheddar cheese. Stir until smooth.
  3. Spread lightly steamed broccoli evenly in the prepared baking dish.
  4. Layer diced cooked chicken over the broccoli.
  5. Pour the creamy mixture evenly over the chicken and broccoli, spreading gently to coat.
  6. Sprinkle the remaining 1/2 cup shredded cheddar cheese evenly over the top.
  7. In a small bowl, mix crushed Ritz crackers with melted butter until evenly coated.
  8. Sprinkle the buttery cracker mixture evenly over the casserole.
  9. Bake uncovered for 25 to 30 minutes, until the topping is golden brown and the casserole is bubbly.
  10. Let rest for 5 to 10 minutes before serving.

  • Drain broccoli well after steaming to prevent excess moisture.
  • Use freshly grated cheddar for smoother melting.
