Light, airy paprika spiced cloud eggs baked to golden perfection with silky yolks nestled in fluffy whipped whites. This simple yet impressive breakfast is warm, savory, and perfect for brunch or a quick elevated morning meal.

  • 4 large eggs, separated
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon olive oil
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 190 C and line a baking sheet with parchment paper. Lightly brush the parchment with olive oil.
  2. Carefully separate the egg whites and yolks, placing the whites in a clean, dry mixing bowl and keeping the yolks intact in a separate bowl.
  3. Add salt and black pepper to the egg whites.
  4. Using a hand mixer or whisk, beat the egg whites until stiff peaks form.
  5. Spoon the whipped egg whites onto the prepared baking sheet, forming four fluffy mounds.
  6. Create a small well in the center of each mound using the back of a spoon.
  7. Bake the egg whites for 5 to 6 minutes until lightly golden and set.
  8. Remove from the oven and gently place one egg yolk into each well. Sprinkle evenly with paprika.
  9. Return to the oven and bake for an additional 3 to 4 minutes until the yolks are just set but still soft.
  10. Remove from the oven, garnish with freshly chopped parsley, and serve immediately.

  • Ensure no yolk gets into the egg whites before whipping for maximum volume.
  • Whip the whites to stiff peaks so they hold their shape while baking.
