A creamy one-pot pasta made with sun-dried tomatoes, garlic, spinach, and parmesan, all simmered together for rich, tangy flavor in every bite. Comforting, easy, and perfect for busy weeknights.

  • 12 ounces penne pasta
  • 1 cup sun-dried tomatoes in oil, drained and sliced
  • 3 garlic cloves, minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 2 cups fresh spinach, lightly packed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic and sliced sun-dried tomatoes. Sauté for 2 to 3 minutes until fragrant.
  3. Pour in vegetable broth and heavy cream, stirring to combine.
  4. Add the penne pasta directly into the pot and stir well so it is mostly submerged.
  5. Bring to a gentle boil, then reduce heat to medium low. Simmer for 12 to 15 minutes, stirring occasionally, until pasta is tender and sauce has thickened.
  6. Stir in parmesan cheese, fresh spinach, salt, black pepper, and red pepper flakes. Cook for 2 to 3 minutes until spinach wilts and sauce becomes creamy.
  7. Remove from heat and let sit for a few minutes before serving.

Notes

  • Stir frequently to prevent the pasta from sticking to the bottom of the pot.
  • If the sauce becomes too thick, add a splash of broth or milk to loosen it.
  • Use freshly grated parmesan for the smoothest texture.
  • Taste before adding extra salt since sun-dried tomatoes and parmesan are naturally salty.
