Rich no bake Lotus brownies cups layered with a fudgy chocolate base, creamy Lotus Biscoff spread, and a smooth chocolate topping. An easy viral inspired dessert that requires no oven.

Ingredients

  • 2 cups chocolate sandwich cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons cocoa powder
  • 1 cup Lotus Biscoff spread
  • 1 cup semi sweet chocolate, chopped or chips
  • 1/2 cup heavy cream
  • 6 Lotus biscuits
  • 2 tablespoons extra Lotus Biscoff spread for drizzling

Instructions

  1. Line a muffin tin with paper liners or use silicone cups.
  2. Mix crushed chocolate sandwich cookies, melted butter, and cocoa powder until combined.
  3. Spoon mixture into cups and press firmly to form a compact base.
  4. Warm Lotus spread slightly and spoon 1 to 2 tablespoons over each base. Chill for 15 minutes.
  5. Heat heavy cream until warm, pour over chopped semi sweet chocolate, and stir until smooth.
  6. Spoon chocolate mixture over the chilled Lotus layer.
  7. Drizzle extra Lotus spread on top and garnish with Lotus biscuit pieces. Chill for at least 1 hour until set.

Notes

  • Chill between layers for clean definition.
  • Store in the refrigerator for up to four days.
  • Freeze for up to one month and thaw in the refrigerator before serving.
