A creamy and comforting egg salad sandwich made with finely chopped hard boiled eggs, mayonnaise, celery, green onions, and Dijon mustard layered between soft white bread with crisp lettuce. A simple, satisfying classic perfect for lunch.

  • 6 large eggs, hard boiled and peeled
  • 1/3 cup mayonnaise
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely sliced green onions
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices white sandwich bread
  • 4 large lettuce leaves

Instructions

  1. Bring a saucepan of water to a boil. Carefully add the eggs and boil for 10 minutes. Remove and cool under cold water, then peel.
  2. Finely chop the hard boiled eggs and place them in a mixing bowl.
  3. Add mayonnaise, chopped celery, sliced green onions, Dijon mustard, salt, and black pepper. Mix gently until creamy but still slightly textured.
  4. Lay out the bread slices on a clean surface.
  5. Place lettuce leaves on four slices of bread.
  6. Spread a generous layer of the egg salad mixture over the lettuce.
  7. Top with the remaining bread slices, press gently, slice in half, and serve.

Notes

  • Do not overmix the filling to keep a pleasant texture.
  • Chill the egg salad for 20 minutes before assembling for easier spreading.
  • Use very fresh soft bread for the best result.
