Soft and fluffy mini pizza bites made with homemade dough, rich tomato sauce, melted mozzarella, and colorful veggies. Perfect for parties, lunchboxes, or a fun kid-friendly snack.

  • 2 cups all purpose flour (about 250 grams)
  • 1 teaspoon instant yeast
  • 3/4 cup warm water (about 180 milliliters)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 cup thick tomato sauce
  • 1 1/2 cups shredded mozzarella cheese (about 150 grams)
  • 1 small bell pepper, finely diced
  • 2 tablespoons black olives, sliced

Instructions

  1. Preheat oven to 190 degrees Celsius and lightly grease a mini muffin tin with olive oil.
  2. In a mixing bowl, combine flour, instant yeast, and salt.
  3. Add warm water and olive oil, then mix until a soft dough forms. Knead for about 5 minutes until smooth.
  4. Divide the dough into small pieces and press each piece into the mini muffin tin cavities to form small cups.
  5. Spoon a small amount of tomato sauce into each dough cup.
  6. Top with shredded mozzarella cheese, diced bell pepper, and sliced olives.
  7. Bake for 12 to 15 minutes until the dough is golden and the cheese is melted and bubbly.
  8. Allow to cool slightly before removing from the tin, then serve warm.

Notes

  • Use room temperature dough for easier shaping.
  • Do not overfill with sauce to prevent soggy centers.
  • Let the bites cool slightly before removing to avoid sticking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven for best texture.
