A creamy keto chicken divan cauliflower bake made with roasted cauliflower, tender chicken, and a rich cheesy sauce, baked until golden and bubbly.

Ingredients

  • 3 cups cooked chicken, chopped or shredded
  • 5 cups cauliflower florets
  • 2 tablespoons olive oil
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Toss cauliflower florets with olive oil, half of the salt, and pepper. Spread on a baking sheet and roast for 20 minutes until lightly golden.
  3. Reduce oven temperature to 375 degrees Fahrenheit and lightly grease a 9×13 inch baking dish.
  4. In a mixing bowl, whisk together cream cheese, sour cream, heavy cream, 1 cup cheddar, Parmesan, garlic powder, onion powder, and remaining salt.
  5. Spread roasted cauliflower in the baking dish, layer cooked chicken on top, and pour the creamy mixture evenly over everything.
  6. Sprinkle with the remaining 1/2 cup cheddar cheese.
  7. Bake uncovered for 20 to 25 minutes until golden and bubbly.
  8. Let rest for 10 minutes before serving.
