Refreshing iced lychee boba made with floral lychee fruit and chewy black tapioca pearls, served over ice for a sweet and cooling drink that feels just like your favorite bubble tea shop treat.

Ingredients

  • 1/2 cup dried black tapioca pearls
  • 4 cups water (for boiling pearls)
  • 1 cup water (for drink base)
  • 1 cup lychee fruit, peeled and pitted
  • 3 tablespoons granulated sugar
  • 1 cup ice cubes

Instructions

  1. Bring 4 cups of water to a rolling boil in a medium saucepan.
  2. Add the tapioca pearls and stir immediately to prevent sticking.
  3. Cook for 20 minutes over medium heat, stirring occasionally.
  4. Turn off heat and let the pearls sit in the hot water for 5 minutes.
  5. Drain and rinse lightly, then set aside.
  6. In a blender, combine lychee fruit, 1 cup water, and granulated sugar. Blend until smooth.
  7. Place cooked pearls into the bottom of two tall glasses.
  8. Add ice cubes, then pour the blended lychee mixture over the top and serve immediately with a wide straw.

Notes

  • Store cooked pearls in simple syrup at room temperature for up to 4 hours.
  • Adjust sugar depending on the sweetness of the lychee.
  • Assemble just before serving for best texture.
