Crunchy mixed nuts coated in golden honey and lightly spiced with cinnamon, then roasted until perfectly caramelized. These honey roasted nuts are sweet, salty, and irresistibly crisp, making them perfect for snacking or gifting.

  • 1 cup (140 grams) raw almonds
  • 1 cup (140 grams) raw cashews
  • 1 cup (110 grams) raw pecans
  • 1 cup (100 grams) raw walnuts
  • 1/3 cup (80 milliliters) honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almonds, cashews, pecans, and walnuts.
  3. Add honey, olive oil, salt, and ground cinnamon to the nuts and toss until evenly coated.
  4. Spread the coated nuts in a single layer on the prepared baking sheet.
  5. Roast for 20 to 25 minutes, stirring halfway through for even caramelization.
  6. Remove from the oven and allow the nuts to cool completely on the baking sheet so they crisp up.
  7. Break apart any clusters and store in an airtight container.
