Tender roasted carrots glazed with honey and warm cumin, caramelized to perfection and finished with fresh herbs for a sweet and savory side dish.

  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh parsley, finely chopped (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper if desired.
  2. In a large mixing bowl, toss the carrots with olive oil, honey, ground cumin, salt, and black pepper until evenly coated.
  3. Spread the carrots in a single layer on the prepared baking sheet, ensuring space between pieces.
  4. Arrange cut sides down if halved for better caramelization.
  5. Roast for 25 to 30 minutes, turning halfway through, until tender and golden with lightly crisp edges.
  6. Remove from the oven and sprinkle with freshly chopped parsley if using.
  7. Serve warm and enjoy.

  • Use fresh, firm carrots for best texture.
