Perfectly cooked sunny side up eggs topped with fresh parsley, chives, cracked black pepper, and a touch of salt. Simple, fresh, and full of flavor, these herb pepper eggs are ready in minutes and make a light yet satisfying meal.

  • 2 large eggs
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1/4 teaspoon freshly cracked black pepper
  • 1/8 teaspoon salt

Instructions

  1. Heat a nonstick skillet over medium low heat.
  2. Add butter to the skillet and allow it to melt gently without browning.
  3. Crack the eggs into a small bowl, then carefully slide them into the skillet.
  4. Cook for 3 to 4 minutes until the egg whites are set and the yolks remain slightly runny, or longer if a firmer yolk is preferred.
  5. Sprinkle chopped parsley and chives evenly over the eggs.
  6. Season with freshly cracked black pepper and salt to taste.
  7. Remove from heat and serve immediately while warm.
