These Healthy Crispy Quinoa Bites are golden on the outside, tender on the inside, and packed with wholesome quinoa, vegetables, and melted cheese. Baked until crisp, they make the perfect nutritious snack, appetizer, or light meal.

  • 2 cups cooked quinoa, fully cooled
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated carrot
  • 1/2 cup finely chopped spinach
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cooked quinoa, eggs, shredded mozzarella cheese, grated carrot, chopped spinach, garlic powder, salt, and black pepper.
  3. Mix thoroughly until evenly combined.
  4. Lightly brush the parchment paper with olive oil.
  5. Scoop tablespoon-sized portions of the mixture and shape into small round patties.
  6. Place the patties evenly spaced on the prepared baking sheet and lightly brush the tops with olive oil.
  7. Bake for 20 to 25 minutes, flipping halfway through, until golden brown and crisp on both sides.
  8. Remove from the oven and allow to cool slightly before serving.
