A lighter take on the classic casserole made with tender chicken, steamed broccoli, and a creamy homemade Greek yogurt sauce. This Healthy Chicken Divan skips canned soup and delivers comforting flavor with wholesome ingredients and balanced richness.

  • 2 pounds boneless skinless chicken breast, cooked and cubed
  • 4 cups fresh broccoli florets, lightly steamed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons all purpose flour
  • 2 cups low sodium chicken broth
  • 1 cup plain Greek yogurt
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and lightly grease a 9×13 inch baking dish.
  2. In a saucepan over medium heat, warm the olive oil. Add the minced garlic and cook for about 30 seconds until fragrant.
  3. Stir in the flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the low sodium chicken broth and cook for 3 to 4 minutes until the sauce thickens.
  5. Remove from heat and whisk in the Greek yogurt, 1 cup of shredded cheddar cheese, salt, and black pepper until smooth.
  6. Spread the cooked cubed chicken evenly in the prepared baking dish and layer the steamed broccoli over the chicken.
  7. Pour the homemade sauce evenly over the chicken and broccoli.
  8. Sprinkle the remaining 1/2 cup shredded cheddar cheese on top and finish with paprika.
  9. Bake uncovered for 20 to 25 minutes until heated through and lightly golden on top.
  10. Let the casserole rest for 5 to 10 minutes before serving.
