A fresh and vibrant rainbow salad made with crisp vegetables, creamy avocado, and a light lemon olive oil dressing for a refreshing healthy meal or side dish.

Ingredients

  • 4 cups mixed leafy greens
  • 1 cup red cabbage, shredded
  • 1 cup carrots, shredded
  • 1 large cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup radish, thinly sliced
  • 1 large avocado, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and chop all vegetables into even bite sized pieces.
  2. Place mixed leafy greens into a large serving bowl.
  3. Layer red cabbage, carrots, cucumber, cherry tomatoes, radish, and avocado on top.
  4. In a small jar, combine olive oil, lemon juice, salt, and black pepper.
  5. Shake well until the dressing is fully combined.
  6. Drizzle dressing over the salad evenly.
  7. Toss gently and serve immediately.

Notes

  • Keep avocado fresh by adding it just before serving
  • Chill vegetables before assembling for extra crunch
