Fresh and satisfying lettuce wraps filled with sliced hard boiled eggs and creamy avocado, lightly seasoned with lemon, salt, and pepper. A wholesome, low carb meal that is simple, nourishing, and ready in minutes.

Ingredients

  • 4 large eggs, hard boiled and sliced
  • 2 ripe avocados, sliced or cubed
  • 8 large romaine or butter lettuce leaves
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon olive oil

Instructions

  1. Bring a small pot of water to a boil. Gently lower the eggs into the water and boil for 10 minutes. Transfer to cold water, cool, peel, and slice.
  2. In a bowl, gently toss the avocado with lemon juice, salt, and black pepper.
  3. Wash and pat dry the lettuce leaves, keeping them whole and intact.
  4. Lay the lettuce leaves flat and place slices of hard boiled egg and avocado in the center of each leaf.
  5. Drizzle lightly with olive oil.
  6. Fold the lettuce around the filling and serve immediately.

Notes

  • Use ripe but firm avocados for the best texture.
  • Assemble just before serving to keep lettuce crisp.
  • Add extra lemon juice if you prefer a brighter flavor.
  • Store boiled eggs in the refrigerator for up to 3 days before assembling.
