Silky translucent glass noodles tossed in a bold and spicy chili sauce with colorful bell peppers, carrots, and green onions for a quick, flavorful, and satisfying meal.

  • 8 ounces dried mung bean glass noodles
  • 1 medium red bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 3 stalks green onions, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar

Instructions

  1. Soak glass noodles in warm water for 10 minutes until softened, then drain well.
  2. In a small bowl, mix soy sauce, chili garlic sauce, sesame oil, rice vinegar, and sugar until combined.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Sauté minced garlic for 30 seconds until fragrant.
  4. Add bell pepper and carrot and stir fry for 2 to 3 minutes until tender-crisp.
  5. Add softened glass noodles to the skillet, pour the sauce over, and toss continuously for 4 to 5 minutes until noodles are fully coated and tender.
  6. Stir in sliced green onions and toss briefly.
  7. Serve hot immediately, garnished with extra green onions if desired.

Notes

  • Do not overcook the noodles to maintain a chewy texture.
  • Toss noodles continuously to prevent sticking.
  • Adjust chili garlic sauce to taste for desired spice level.
