A high protein crustless cottage cheese pizza with a golden baked base, rich tomato sauce, melted mozzarella, and fresh basil. Light, satisfying, and perfect for a healthier pizza night.

  • 1 1/2 cups cottage cheese
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded mozzarella cheese for topping
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup tomato sauce
  • 1/2 cup cherry tomatoes, sliced
  • Fresh basil leaves, a small handful

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a blender, combine cottage cheese, eggs, 1 cup shredded mozzarella, parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper. Blend until smooth.
  3. Pour the mixture onto the prepared baking sheet and spread into a round about 8 to 9 inches wide.
  4. Bake for 20 to 25 minutes until the base is set and lightly golden around the edges.
  5. Remove from the oven and spread tomato sauce evenly over the baked base.
  6. Sprinkle the remaining 1/2 cup mozzarella cheese on top and add sliced cherry tomatoes.
  7. Return to the oven and bake for another 8 to 10 minutes until the cheese is melted and bubbly.
  8. Let cool for 5 minutes, top with fresh basil leaves, slice, and serve warm.

Notes

  • Drain excess liquid from cottage cheese if it appears watery.
  • Blend well for a smoother base texture.
  • Do not skip the first bake or the base may become soggy.
  • Reheat leftovers in the oven to maintain texture.
