A bold sweet and savory sandwich made with crispy fried chicken, melted cheddar cheese, fluffy golden waffles, fresh lettuce, and honey mustard sauce.

  • 1 pound boneless skinless chicken thighs
  • 1 cup buttermilk
  • 1 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 cups all purpose flour (for waffles)
  • 2 teaspoons baking powder
  • 1/2 cup melted butter
  • 1 1/2 cups cheddar cheese, sliced or shredded
  • 1 cup shredded lettuce
  • 1/2 cup honey mustard sauce
  • Oil for frying

Instructions

  1. Heat oil in a large skillet over medium heat and preheat waffle maker.
  2. Marinate chicken in buttermilk for at least 30 minutes.
  3. Mix flour, salt, pepper, paprika, and garlic powder in a bowl.
  4. Coat chicken in seasoned flour and fry 6 to 8 minutes per side until golden and fully cooked.
  5. Prepare waffle batter by mixing eggs, milk, flour, baking powder, and melted butter. Cook waffles until golden.
  6. Place cheese over hot chicken to melt slightly.
  7. Assemble sandwich with waffle, cheesy chicken, lettuce, honey mustard, and top waffle. Slice and serve warm.

Notes

  • Do not overcrowd the skillet when frying.
  • Toast waffles lightly before assembling.
  • Let fried chicken rest on a rack to stay crispy.
