Golden crispy beef tacos filled with seasoned ground beef, melted cheddar cheese, and fresh toppings. A quick and satisfying taco night favorite with the perfect crunch in every bite.

  • 1 pound ground beef
  • 8 small flour tortillas
  • 1 ½ cups shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Add chopped onion and cook until softened. Stir in minced garlic and cook for 30 seconds.
  3. Add ground beef, salt, black pepper, chili powder, cumin, and paprika. Cook until browned and fully cooked, breaking it apart as it cooks.
  4. Drain excess grease if needed and keep the skillet over medium heat.
  5. Place a tortilla flat in the skillet. Add shredded cheddar cheese on one half, spoon beef mixture over the cheese, then sprinkle a little more cheese on top.
  6. Fold the tortilla in half and cook for 2 to 3 minutes per side until golden and crispy and the cheese is melted.
  7. Remove from skillet and let rest briefly.
  8. Open slightly and add shredded lettuce and diced tomatoes just before serving.
  9. Serve warm and crispy.

Notes

  • Warm tortillas slightly before filling to prevent cracking.
  • Do not overfill to make flipping easier.
  • Add cheese on both sides of the beef to help seal the taco.
  • Store leftover filling in the refrigerator for up to 2 days.
