  • 4 thick slices sandwich bread
  • 250 milliliters whole milk
  • 3 large egg yolks
  • 100 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • 1 tablespoon powdered sugar (optional, for garnish)

Instructions

  1. Place a small saucepan over medium low heat.
  2. In a bowl, whisk together the egg yolks, 70 grams of granulated sugar, cornstarch, and vanilla extract until smooth.
  3. Warm the milk in the saucepan until hot but not boiling, then slowly whisk it into the egg mixture.
  4. Return the mixture to the saucepan and cook gently, stirring constantly, until thickened into a smooth custard.
  5. Remove from heat and let the custard cool slightly.
  6. Spread the custard evenly onto two slices of bread and top with the remaining slices to form sandwiches.
  7. Melt butter in a skillet over medium heat and fry each sandwich for 2 to 3 minutes per side until golden brown and crisp.
  8. Sprinkle the remaining 30 grams of granulated sugar evenly over the top of each sandwich and caramelize gently in the skillet over low heat until the sugar melts and forms a crisp layer.
  9. Allow to cool briefly, dust with powdered sugar if desired, then serve warm.
