This Creamy Red Lentil Coconut Soup is silky, gently spiced, and deeply comforting. Made with tender red lentils, aromatic spices, and rich coconut milk, it is a nourishing one pot meal that is perfect for cozy dinners or easy meal prep.

  • 1 cup dried red lentils, rinsed
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • 1 cup full fat coconut milk
  • 1 tablespoon olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Place a large soup pot over medium heat.
  2. In a small bowl, mix together curry powder and ground cumin.
  3. Add olive oil to the pot and sauté the chopped onion for 4 to 5 minutes until soft and translucent. Stir in the garlic and grated ginger and cook for 1 minute more.
  4. Add the spice mixture and stir for about 30 seconds until fragrant. Add the rinsed red lentils and vegetable broth, stirring to combine.
  5. Bring to a gentle boil, then reduce heat and simmer for 20 to 25 minutes until the lentils are tender and beginning to break down.
  6. Stir in the coconut milk, salt, and black pepper. Simmer for 5 more minutes. Blend partially or fully to your desired texture, then stir in fresh lime juice.
  7. Ladle into bowls and garnish with chopped fresh cilantro before serving.
