  • 8 ounces sliced button or cremini mushrooms
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions, about 8 to 10 minutes, until al dente. Drain and set aside.
  2. Heat olive oil and butter in a wide skillet over medium heat until melted and shimmering.
  3. Add the sliced mushrooms in a single layer and cook for 4 to 5 minutes until golden brown and tender.
  4. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  5. Pour in the heavy cream and let it simmer gently for 3 to 4 minutes until slightly thickened.
  6. Stir in the freshly grated parmesan cheese and mix until melted and smooth.
  7. Add the drained pasta to the skillet and toss until evenly coated in the creamy sauce.
  8. Season with salt and black pepper to taste.
