Crispy, smoky, and slightly sweet, these Corn Ribs are roasted until curled and golden with bold seasoning and a splash of fresh lime. A fun and flavorful twist on classic corn that works perfectly as a snack, side, or party appetizer.

  • 4 ears fresh corn on the cob, husked and cleaned
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder (optional)
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Carefully slice each ear of corn lengthwise into quarters to create rib-like strips.
  3. In a large bowl, toss the corn ribs with olive oil, paprika, garlic powder, salt, black pepper, and chili powder if using.
  4. Arrange the seasoned corn ribs in a single layer on the prepared baking sheet.
  5. Roast for 25 minutes, flipping halfway through, until curled and slightly charred at the edges.
  6. Remove from the oven and drizzle with fresh lime juice.
  7. Sprinkle chopped cilantro over the top and serve warm.

Notes

  • Use a sharp knife and steady pressure when cutting the corn.
  • Do not overcrowd the baking sheet to ensure proper roasting.
  • For extra char, broil for the last 2 minutes while watching carefully.
