This Color Layer Chicken Rice Jar is a fresh and vibrant meal packed with fluffy white rice, tender seasoned chicken, crisp shredded carrots, cool cucumber, and crunchy red cabbage. Beautifully layered in a jar, it is perfect for meal prep, light dinners, or grab and go lunches.

Ingredients

  • 3 cups cooked white rice, cooled
  • 2 medium boneless skinless chicken breast, about 400 grams, cooked and sliced
  • 1 cup shredded carrots, about 100 grams
  • 1 medium cucumber, thinly sliced
  • 1 cup thinly sliced red cabbage, about 90 grams
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Heat a skillet over medium heat.
  2. Season the chicken breast with salt and black pepper.
  3. Add olive oil to the skillet and cook the chicken for 6 to 8 minutes per side until fully cooked. Remove from heat, let rest, then slice into strips.
  4. Spoon about ¾ cup of cooked white rice into the bottom of each jar and press gently to level.
  5. Layer sliced chicken evenly over the rice in each jar.
  6. Add shredded carrots, sliced cucumber, and red cabbage on top in neat layers.
  7. Seal the jars and refrigerate until ready to serve. Shake gently or stir before eating to combine flavors.

Notes

  • Allow the rice to cool before layering to prevent condensation.
  • Pat vegetables dry before assembling to keep them crisp.
  • Add any dressing just before serving to maintain freshness.
  • Store jars tightly sealed in the refrigerator for up to 3 days.
