Flaky croissant dough twisted with rich dark chocolate and aromatic zaatar, baked until golden and crisp. A unique sweet and savory pastry perfect for brunch or an elegant afternoon treat.

  • 1 store bought croissant dough sheet, about 250 grams
  • 100 grams dark chocolate, chopped
  • 1 tablespoon zaatar
  • 1 large egg, beaten
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon sugar

Instructions

  1. Preheat oven to 375 degrees F, about 190 degrees C. Line a baking sheet with parchment paper.
  2. In a small bowl, mix chopped dark chocolate with sugar.
  3. Roll out the croissant dough sheet on a lightly floured surface.
  4. Brush melted butter evenly over the dough. Sprinkle the chocolate mixture across the surface, then lightly sprinkle zaatar over the chocolate.
  5. Roll the dough tightly into a log. Slice lengthwise down the center to expose the layers.
  6. Twist the two halves together gently, keeping the layers facing upward. Transfer to the prepared baking sheet.
  7. Brush the twisted dough with beaten egg.
  8. Bake for 20 to 25 minutes until deeply golden and crisp.
  9. Allow to cool slightly before slicing and serving warm.

Notes

  • Chill the twisted pastry for 10 minutes before baking for sharper layers.
  • Do not overfill with chocolate to prevent leakage.
  • Sprinkle a tiny extra pinch of zaatar after baking for enhanced aroma.
