Fluffy pancakes topped with warm cinnamon caramelized apples and a light caramel drizzle for a cozy breakfast treat.

Ingredients

  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted for batter
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter for apples
  • 2 medium apples, peeled and sliced
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons caramel sauce

Instructions

  1. Heat a nonstick skillet over medium heat and lightly grease it.
  2. Whisk flour, baking powder, salt, and sugar in a bowl.
  3. In another bowl mix milk, egg, melted butter, and vanilla extract.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Pour 1/4 cup batter onto skillet for each pancake.
  6. Cook until bubbles form, flip and cook until golden brown.
  7. In a separate pan melt butter, add apples, brown sugar, and cinnamon.
  8. Cook until apples are tender and caramelized.
  9. Stack pancakes and spoon caramelized apples on top.
  10. Drizzle with caramel sauce and serve warm.

Notes

  • Do not overmix batter for fluffy texture.
  • Cook apples over medium heat to avoid burning.
  • Keep pancakes warm in a low oven while cooking batches.
