A vibrant and refreshing butterfly pea flower iced tea with a natural deep blue hue that transforms into purple with fresh lemon juice. Light, floral, and caffeine free, perfect for warm days.

Ingredients

  • 2 tablespoons dried butterfly pea flowers
  • 2 cups hot water
  • 1 to 2 tablespoons fresh lemon juice
  • 1 to 2 teaspoons honey or sugar (optional)
  • 1 cup ice cubes

Instructions

  1. Heat water until hot but not fully boiling.
  2. Place dried butterfly pea flowers in a heatproof jar or teapot.
  3. Pour 2 cups hot water over the flowers and let steep for 5 to 7 minutes until deep blue.
  4. Strain the tea into a pitcher to remove the flowers.
  5. Stir in honey or sugar if using and mix until dissolved.
  6. Allow the tea to cool to room temperature, then refrigerate until chilled.
  7. Fill glasses with ice cubes and pour chilled tea over ice.
  8. Add fresh lemon juice slowly to create the purple color transformation and serve immediately.

Notes

  • Use hot but not boiling water to preserve flavor.
  • Add lemon just before serving for the best color effect.
