Ingredients

Scale
  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 1 large green bell pepper, sliced into strips
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce, divided
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 2 teaspoons freshly cracked black pepper
  • 1 teaspoon sugar
  • 1/4 cup beef broth
  • 2 tablespoons vegetable oil, divided
  • 3 cups cooked white rice

Instructions

  1. Heat a large skillet or wok over medium high heat and add 1 tablespoon vegetable oil.
  2. In a bowl, toss the sliced beef with cornstarch and 1 tablespoon soy sauce until evenly coated.
  3. Add the beef to the hot pan in a single layer and sear for 2 to 3 minutes until browned. Remove and set aside.
  4. Add the remaining 1 tablespoon vegetable oil to the pan. Stir fry onion and green bell pepper for 2 to 3 minutes until slightly tender but still crisp. Add minced garlic and cook for 30 seconds.
  5. In a small bowl, mix the remaining 2 tablespoons soy sauce, oyster sauce, beef broth, sugar, and freshly cracked black pepper.
  6. Return the beef to the pan and pour the sauce over everything. Toss and cook for 2 to 3 minutes until the sauce thickens and coats the beef.
  7. Serve immediately over warm cooked white rice.

Notes

  • Slice the beef thinly against the grain for maximum tenderness.
  • Do not overcrowd the pan to ensure proper browning.
  • Prep all ingredients before cooking since stir frying moves quickly.
  • Add a splash of broth when reheating if the sauce thickens too much.
