A creamy layered dessert that blends classic banana pudding with earthy matcha flavor, featuring silky green tea pudding, fresh bananas, and soft vanilla wafers.

Ingredients

  • 2 cups whole milk (480 milliliters)
  • ½ cup granulated sugar (100 grams)
  • 3 tablespoons cornstarch (24 grams)
  • 3 large egg yolks
  • 2 teaspoons matcha powder, sifted
  • 1 tablespoon unsalted butter (14 grams)
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas, sliced (about 360 grams total)
  • 2 cups vanilla wafer cookies (about 150 grams)
  • 1 cup whipped cream (240 milliliters), lightly sweetened

Instructions

  1. Place a saucepan over medium heat and gently warm the milk until steaming but not boiling.
  2. In a mixing bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
  3. Slowly whisk the warm milk into the egg mixture to temper, then return everything to the saucepan.
  4. Cook over medium heat, whisking constantly, until thickened, about 5 to 7 minutes.
  5. Remove from heat and whisk in sifted matcha powder, butter, and vanilla extract until smooth and fully incorporated.
  6. Allow the pudding to cool slightly, stirring occasionally to prevent a skin from forming.
  7. In a glass dish or individual cups, layer vanilla wafer cookies, sliced bananas, and matcha pudding. Repeat layers until ingredients are used.
  8. Top with whipped cream and refrigerate for at least 2 hours before serving.

Notes

  • Sift the matcha powder to prevent clumps in the pudding.
  • Slice bananas just before layering to reduce browning.
  • Chill for at least 2 hours to allow flavors to develop and texture to set properly.
