Golden custardy French toast topped with fresh banana slices and a rich homemade caramel sauce. This comforting breakfast is sweet, buttery, and perfect for weekend brunch or a special morning treat.

Ingredients

Scale
  • 8 slices thick brioche or challah bread
  • 3 large eggs
  • 1 cup whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter
  • 2 large ripe bananas, sliced
  • 1/2 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt

Instructions

  1. Heat a large skillet over medium heat.
  2. In a mixing bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, and ground cinnamon until smooth.
  3. Melt 1 tablespoon of butter in the skillet, coating the surface evenly.
  4. Dip each slice of bread into the custard mixture, allowing both sides to absorb lightly without oversoaking.
  5. Place soaked slices into the skillet and cook for 3 to 4 minutes per side until golden brown and cooked through. Repeat with remaining butter and slices.
  6. In a small saucepan over medium heat, combine brown sugar, heavy cream, and salt. Stir continuously for 3 to 4 minutes until thickened into a smooth caramel sauce.
  7. Arrange the French toast on plates, top with sliced bananas, and drizzle generously with warm caramel sauce. Serve immediately.

Notes

  • Use slightly stale bread for best texture and structure.
  • Cook over medium heat to avoid burning the outside before the inside sets.
  • Stir caramel constantly to prevent scorching.
