Soft and cake-like chocolate baked oats made with blended rolled oats, cocoa powder, and melty chocolate chips. This wholesome breakfast feels like dessert but keeps you satisfied and energized.

Ingredients

  • 1 cup rolled oats
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons chocolate chips

Instructions

  1. Preheat the oven to 350°F and lightly grease an 8 inch baking dish.
  2. Add the rolled oats, milk, egg, cocoa powder, baking powder, honey, and vanilla extract to a blender.
  3. Blend until the mixture is completely smooth and resembles a thick batter.
  4. Pour the batter into the prepared baking dish and smooth the top evenly.
  5. Fold in the chocolate chips gently, then sprinkle a few extra on top if desired.
  6. Bake for 18 to 22 minutes, until the center is set but still slightly soft.
  7. Remove from the oven and allow to cool for 5 minutes before slicing.
  8. Serve warm or store for later.

Notes

  • Do not overbake, as this can make the baked oats dry.
  • Blend thoroughly to achieve a smooth, cake-like texture.
  • Store leftovers in an airtight container in the refrigerator for up to four days.
