5-Minute Avocado Egg Tacos are a quick and satisfying breakfast made with fluffy scrambled eggs, creamy mashed avocado, and warm corn tortillas. Ready in just minutes, they are perfect for busy mornings or a simple brunch.

  • 1 large ripe avocado, mashed
  • 4 small corn tortillas, about 15 centimeters each
  • 1 teaspoon olive oil or butter
  • 1 quarter teaspoon salt
  • 1 eighth teaspoon black pepper, freshly ground

Instructions

  1. Place a nonstick skillet over medium low heat.
  2. Crack the eggs into a mixing bowl, add salt and black pepper, and whisk until fully blended.
  3. Add olive oil or butter to the skillet and allow it to melt gently.
  4. Pour the whisked eggs into the skillet and cook slowly, stirring gently with a spatula until softly scrambled and just set, about 2 to 3 minutes.
  5. Remove the eggs from heat while still slightly glossy to keep them tender.
  6. Mash the avocado with a fork until smooth.
  7. Warm the tortillas briefly in a dry pan for about 20 seconds per side.
  8. Spread mashed avocado onto each tortilla, top with scrambled eggs, fold gently, and serve immediately.
