Soft, naturally sweet cookies made with just ripe bananas and hearty rolled oats. These simple baked treats are wholesome, quick to prepare, and perfect for breakfast or a light snack.

  • 2 large ripe bananas, mashed
  • 1 cup rolled oats

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until mostly smooth with only small lumps remaining.
  3. Add the rolled oats to the mashed bananas and stir until fully combined.
  4. Scoop spoonfuls of the mixture onto the prepared baking sheet and gently flatten into cookie shapes.
  5. Bake for 12 to 15 minutes until lightly golden and set.
  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to cool completely.
  7. Serve warm or at room temperature.

Notes
