Ingredients

Scale
  • 2 cups full fat plain Greek yogurt
  • 2 tablespoons honey
  • 1 cup granola
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Line a baking sheet with parchment paper and clear a flat space in the freezer.
  2. In a bowl, stir the Greek yogurt and honey until smooth and evenly combined.
  3. Place the lined baking sheet on a stable surface.
  4. Spread the yogurt mixture into an even layer about 1/2 inch thick. Sprinkle granola, sliced strawberries, and blueberries evenly over the top. Press them lightly into the yogurt.
  5. Transfer the tray to the freezer and freeze for about 3 hours, or until completely firm.
  6. Remove from the freezer and lift the bark from the parchment paper.
  7. Break into 8 pieces and serve immediately, or store in an airtight container in the freezer.

Notes

  • Use full fat Greek yogurt for the creamiest texture.
  • Make sure fruit is dry before adding to prevent ice crystals.
  • Store with parchment between layers to prevent sticking.
  • Let sit at room temperature for 1 to 2 minutes before eating for best texture.
