A fresh and creamy yogurt chicken sandwich layered with herbed Greek yogurt chicken, crisp cucumbers, red onion, and leafy greens between hearty multigrain bread. Perfect for lunch, meal prep, or a light dinner.

  • 2 cups cooked chicken, shredded or chopped
  • 1/2 cup plain full-fat Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 small cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1 cup leafy greens (such as kale or arugula)
  • 4 slices multigrain bread

Instructions

  1. In a bowl, combine the chicken, Greek yogurt, dill, garlic powder, lemon juice, salt, and pepper. Stir until well mixed.
  2. Lightly toast the multigrain bread if desired for added texture.
  3. Lay a slice of bread on a clean surface. Add a layer of leafy greens, then scoop a generous amount of the yogurt chicken mixture on top.
  4. Add cucumber and red onion slices over the chicken mixture.
  5. Top with the second slice of bread. Press gently, then cut the sandwich in half.
  6. Serve immediately or wrap and refrigerate for later.

Notes

  • Use rotisserie chicken for a faster prep.
  • Let the filling chill for 15–30 minutes to deepen the flavor.
  • Add crushed walnuts or sunflower seeds for extra crunch.
  • Layering leafy greens beneath and above the filling helps prevent soggy bread.
