  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease an 8×8 baking dish or cast iron skillet.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the buttermilk, eggs, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean and the top is golden.
  7. Let the corn bread rest for 10 minutes before slicing. Serve warm.
