  • 1 cup uncooked quinoa (yields ~3 cups cooked)
  • 2 cups cooked shredded chicken
  • 1 large sweet potato, peeled and diced
  • 2 cups kale, chopped and destemmed
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Roast for 25–30 minutes until golden and tender.
  3. Cook quinoa according to package instructions and set aside.
  4. In a large bowl, combine cooked quinoa, shredded chicken, roasted sweet potatoes, and chopped kale.
  5. Drizzle with remaining olive oil and lemon juice. Toss gently to combine.
  6. Top with crumbled feta and parsley. Adjust seasoning to taste.
  7. Serve warm and enjoy.
