A healthy and vibrant alternative to bread, these sweet potato slices are toasted until tender and topped with creamy almond butter, fresh fruit, and seeds.

Ingredients

  • 1 large sweet potato
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 cup almond butter
  • 1 ripe banana
  • 1/4 cup blueberries
  • 1 teaspoon hemp seeds
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Scrub the sweet potato and slice it lengthwise into quarter-inch thick planks.
  2. Lightly brush both sides of each slice with olive oil and sprinkle with sea salt.
  3. Bake in a 400°F oven for 20 minutes (flipping halfway) or toast in a toaster on high for 2-3 cycles until tender.
  4. Remove the hot slices and spread with a generous layer of almond butter.
  5. Top with banana slices, fresh blueberries, and hemp seeds.
  6. Dust with ground cinnamon and serve immediately.

Notes

  • Pick a straight sweet potato for more uniform slices.
  • If using a toaster, you may need to run it multiple times to ensure the center is soft.
  • Leave the skin on for better structural integrity and extra nutrients.
