A comforting oven baked dish made with fluffy rice, hearty chickpeas, and tender vegetables, perfect for easy weeknight meals.

Ingredients

  • 1 cup long grain rice, uncooked
  • 1 1/2 cups cooked chickpeas, drained and rinsed
  • 1 cup mushrooms, finely chopped
  • 1 cup sweet corn
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F and lightly grease a baking dish.
  2. In a large bowl, combine rice, chickpeas, mushrooms, corn, onion, and garlic.
  3. Transfer the mixture to the prepared baking dish and spread evenly.
  4. Pour vegetable broth and olive oil over the mixture, then season with salt, pepper, and thyme.
  5. Cover tightly with foil and bake for 40 minutes.
  6. Uncover and bake for an additional 10 minutes until lightly golden.
  7. Remove from oven, rest for 5 minutes, then sprinkle with parsley before serving.
