Lightly sweet, warmly fragrant vanilla popcorn made with pantry staples. This quick snack is crisp, comforting, and perfect for movie nights or gift bags.

Ingredients

  • 1/2 cup popcorn kernels
  • 2 tablespoons vegetable oil
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • A pinch of salt

Instructions

  1. Heat a large pot over medium heat and add the vegetable oil.
  2. Drop in 3–4 popcorn kernels and cover. Once they pop, add the rest of the kernels and shake the pot occasionally.
  3. In a small saucepan over low heat, stir together sugar and vanilla extract until sugar dissolves. Remove from heat.
  4. When popping slows, remove the popcorn from heat and transfer it to a large mixing bowl.
  5. Pour the vanilla-sugar mixture over the popcorn and stir quickly and gently to coat.
  6. Spread the popcorn onto a baking sheet lined with parchment paper to cool completely.
  7. Once cooled, break into pieces and enjoy.
